Add the eggs one at a time and beat well, then add the cognac and the baking powder. Add the flour one cup at a time, mixing well, until a smooth dough is formed (you want your dough to be soft and smooth, and not sticky).

Grease a baking pan, set aside a small part of the dough for the lattice top, and press the remaining dough evenly onto bottom and sides of the pan.

To prepare the filling, peel, core and slice the apples. Withdraw from the fire, and spoon the filling into the pan over the dough.

To make the lattice top, roll small pieces of the dough you kept aside into strips with your fingers, place them horizontally over the filling and press down the edges to ‘glue’ them to the crust.
